Well, March certainly came in like a lion...It snowed around 8 inches last night/this morning and it is still coming down! These snowy days make me crave delicious, filling comfort food. Last night when the snow began, I whipped up enough mashed potatoes for a small army and decided to bake a Ghirardeli chocolate cake with Ghirardeli buttercream frosting. Mmmmm.
One thing I like to make on cold days - in the morning or for dinner - are potato pancakes. They are so simple! Here is a great recipe (I can't remember where I found it and I've made a few personal modifications... but it's a good one):
6 large potatoes, peeled and grated
4 eggs, beaten
2 tablespoons milk
3 tablespoons flour
3 tablespoons baking powder
1 teaspoon salt
vegetable oil
Mix all ingredients together and drop by large spoonfuls onto skillet. Saute in hot oil until undersides are browned; turn and fry other sides.
You can add anything to these to spice them up. I like to add onions and top them with cheese - extra sharp white cheddar is perfect! Yummy!
