Apple-Cinnamon Upside-Down Cake

Last night I decided to try a recipe for Apple-Cinnamon Upside-Down Cake that I got in a Martha Stewart Everday Food email newsletter. It sounded delicious and I had almost all the ingredients (except for light brown sugar) at my house. It said the prep time was only 20 minutes... but it took me a little bit longer than that, especially since peeling/coring/slicing apples takes me awhile. You can get the original recipe here.

As usual, I was doing this bit of baking late night and it was after 10:30 when I finished, so instead of having it last night I had a slice of it this morning. It was good...but once again, not great. I am sensing a pattern with these Martha Stewart recipes... unfortunately. I am glad that I waited to have it this morning because it wasn't quite as sweet or cinnamony as I expected. The fruit tasted delicious (all the butter and brown sugar helped with that) and the cake was ok. It was light enough that I think it would be better served at breakfast, rather than as a dessert. I added more cinnamon than the recipe called for and STILL had a problem tasting that in the cake. Also, I would add more milk to the batter to make it a bit more moist...I'm pretty sure that I won't be able to eat anymore of this after today because it will be too dry.

Not a recipe I'll be saving for years to come... but I guess it was worth a try!
